It's interesting how biased individuals pounce back when a PROFESSIONAL REVIEWER gives them a not-so-positive grade. Helen Schwab has been doing this for a very long time and she is very good at what she does. She is well respected in the Charlotte culinary world.
Sabi is just one of the string of "Asian Grills" that have been flooding the Charlotte area for the last two years now. Most of them are chinese restaurant operators who decided to add sushi, Thai and other so called asian fare to their menu. They spend money on the decor, hire a "chef" and voila, you have an Asian Grill and sushi bar. Most of the time, however, they do not consistency follow-through on their promise. The key word here is consistency. Not a lot of restos in our area can execute this budding concept (asian grill) well.
Not too long ago, Kudzu on Broad on Main St. in downtown Davidson was also given two stars by the Charlotte Observer. It may or may not be a coincidence that a few months after that review, Kudzu eventually went out of business, citing "family-related..need to spend more time with the kids.." issues for closing their doors down. "Toast" now occupies that spot.
Instead of critizising Helen for her views, find ways to improve. At this early stage of your existense, this should be a wake up call for you. You have been given free advice that woud have otherwise cost you an arm and a leg if you would have hired a consultant.
The people of Davidson are mostly forgiving and will give you another chance, if they see that you are trying. Treat Davidson well, and it will do the same back to you.
